I find it very strange, coriander has a love/hate relationship with people. Some of my closest friends absolutely hate it. I and many others love it. It goes so well with all cuisines, most dishes and an excellent garnish, what is there not to like?
The problem comes when you have just too much left over and don't need to use it.
So what do I do? I couldn't let it go to waste, so I did something even better.
I made Pesto. Coriander Pesto to be precise, it was alright. Tasty and ideal for a pasta and a recipe I will use again. Proudly I can say is that I made the recipe up and am happy with this experiment.

That was it. It was alright, it was good for dinner and I made sure i didn't waste the coriander in my fridge.
