This edition of #shayansglobalcooking challenge was slightly different as i provided more information my many, many followers. The hundreds and thousands of readers i have, were this time informed of what i was going to cook from each country. No longer just choosing dishes based on the country name, but now based on the knowledge of what the dish was.
This change was welcomed by millions of people and the feedback has been immense.
As i am starting from scratch with all these recipes, i browse the world wide web for recipes and inspiration. For this recipe i used Taste The Caribbean , so thank you to them.
The recipe is above and i will recite this for you briefly.
- marinade the pork overnight with lemon juice, orange juice, salt, pepper, chilli, shallot and onions.
- from here cook the mixture in a saucepan with added water for an hour and a half.
- Once cooked - get the rice and beans ready. Cook shallots and beans with the liquid from the beans (boiled on low heat for an hour) and add the rice
- Fry the pork until golden brown all over- a few minutes
